In Chiềng Ban, Mai Sơn, the northwestern fog settles thick each dawn, so the cherries ripen slowly.
Thái women pick each red cherry with the same patience they give a piêu scarf — months of weaving for a single piece. Coffee reached Sơn La with the French in the 1940s; today its Arabica carries its own geographical indication.
